Fluffy Pancakes

These super fluffy American-style pancakes are the ultimate motivation to get out of bed.

Preparation time: 30 minutes

Make: 6 Pancakes

Ingredients

• 150 grams of Farina Banana Flour (any flavor)
• 295 ml of milk. Any kind can be used
• 1 large egg
• 4 tablespoons of butter, plus extra for baking
• 2 tablespoons of sugar
• 1 tablespoon of baking powder
• 1/2 teaspoon of salt
• 1 teaspoon of vanilla extract
Optional:
• Fresh fruit such as banana or strawberries

Preparation

  1. Whisk together flour, sugar, baking powder and salt in a bowl.
  2. Heat the milk in the microwave or on the stove top until it is warm, but not cooking. Melt the butter in the same way.
  3. Whisk together milk, egg, melted butter and vanilla extract in a separate bowl.
  4. Make a well in the center of the flour mixture, pour the milk mixture into the well and use a fork to stir until no more flour clumps are visible. It's okay if the dough has small lumps, it's more important not to overmix the dough.
  5. Heat a large frying pan over medium heat. Melt some butter to prevent stickiness. You can use a tablespoon (fill it ¾ full per pancake) to spoon the batter into the pan. Gently spread it into a 10cm circle.
  6. Leave for about 2 minutes. When the edges look dry and bubbles start to appear flip. Once flipped, cook for 1 to 2 minutes or until lightly browned and cooked through in the middle.
  7. Delicious with butter and/or fresh fruit.
